What it is
A thick, rounded cookie with a soft marshmallow-based exterior finished in fine cocoa powder, filled generously with home-made pistachio paste and golden kunafa strands. Cut one open and the filling is the point: creamy pistachio running through visible strands of crisp pastry.
The eating experience is a sequence rather than a single note. Soft and chewy on the outside, creamy in the middle, then the kunafa gives way with a crunch. That contrast is what the product is built around, and it is why the pistachio paste is made in our own kitchen rather than bought in.
